The new layout does not allow me to put specific fields on one page

The new layout does not allow me to put specific fields on one page. This is very frustrating and not what I want in my form! 

You seem to be referring to Jotform Cards. 

You can switch back to one form page layout in the form settings. Just navigate to the following:

Settings > Form Settings > More Settings > Form Layout:

If you wish this a default for your account, just go to your account settings page and choose All Questions in One Page:
