Can you please see why my form's are submitting without any selection of products or correct validation of credit card details

I'm able to submit form without correct credit card details or any product selection (even though its a mandatory field). 

Can you please explain if I have selected someone thing in setting which is allowing this?

I am not sure if I have understood your question correctly. Do you mean to say that you are able to submit form with selecting any product from your payment tool?

I did check your form and found that you have one product by default selected in your payment tool which is actually a free product. That is the reason why your form can be submitted with out any other selection. If you select any other product from your form and your total amount it not zero, your form will not be allowed to be submitted without credit card details. Please check the screenshot below:

My issue is even if I had a different default product, they are able to go through without picking any other product? Is that right? 

Also the credit card is allowing fake numbers to be inserted? Like long as I make up a fake 12 digit number it’s letting me submit? Is that right?

The price of your default product is 0 that's why it can go through, you need to set a price to your default product.

No it doesn't let you submit, when you click submit it will say the payment can not be proceed, wrong credit card information.
