Can I setup the Image Choice field to only show the text without the image preview on the the email notification?

I see that in the multi step form type name and surname are always together in a single page field, I need to recieve it separately in the email notice, is it possible? 

Moreover, is possible for the "Image Choice" element recieve in the email notice only the text without the image preview?

I don't think it's possible to exclude the image from the email notification. Is there any particular reason why you're using the IMAGE CHOICE field yet you don't want the image to show up on the email?

Why not use the SINGLE CHOICE or MULTIPLE CHOICE fields instead? These 2 fields will only show the option (text) that was selected.

For comparison:
