I would like to condition the text in the PayPal Express subhead. Since you cannot have more than one PayPal Express widget per form, I want to change the subhead in the single one in the form based on the value of a hidden field. (Paypal includes this subhead in the email it sends to us (the PayPal account owner). We use that to differentiate what was purchased. )

Unfortunately, this is not possible in the form builder. The sub label is a static element and cannot be changed with conditional logic. A workaround would be to utilize the Custom Data Field from the Additional Gateway Settings to fetch a data from a hidden field.
Note that this option in the Paypal integration only supports a textbox field, so you must change the field type if it's not a textbox.

Thanks for the quick response. I see how to do that, but I don't know what I use this for to achieve my purpose. If I put the hidden field in there....what happens? Does the value of this fields ultimately end up in the email we get from PayPal for each transaction?

The option my colleague referred to passes the contents of a field to the PayPal integration. This allows for passing a field value to PayPal to be included in the receipt. The value would also be included in emails in the PayPal field contents.
