When I go in to look at my submissions I can only see a date the form submitted and not the data?

Can you try unchecking the option 'Europe Datacenter' from your account settings?
Go to https://www.jotform.com/myaccount/data
Uncheck "Store my data only in Europe" and check back your form submission again.
Let us know if it works or not.
