Can I switch to Authorize.net and it automatically charge the card as it currently does with Stripe? I saw a blog post that said that this can only be done with Stripe, is that correct? Also I am having a hard time figuring out how to remove the stripe integration and change it to authorize.net

I am not sure if I fully I understand your concern. By default, the payment processor will automatically charge the credit card provided by the submitter. It can be PayPal, Authorize.Net or Stripe.
Are you referring to the payment authorization option where you can capture the billing information and charge the user at a later time? If yes, then you just need to enable the "Authorization Only" option in Authorize.Net integration. Here's a guide: https://www.jotform.com/help/292-How-to-Enable-Payment-Authorization.
Also, I am having a hard time figuring out how to remove the stripe integration and change it to authorize.net
You can delete the current payment integration by clicking the payment field and then hitting the "Trash" icon. After deleting that, you can just add the "Authorize.Net" payment integration. The old products from previous integration should be prepopulated automatically.
Hope that helps. Let us know if you are still having issues. Thank you.
