Is it possible to specify the date when the auto-notification will be sent, after the data has been submitted? If not, can you please create a feature request? This functionality would be extremely helpful to send out update emails to all the entries in the table on demand and thereby maintaining the data in the sheet.

You can only predefine scheduled autoresponder in the autoresponder settings but not after. https://www.jotform.com/help/451-Spice-up-Your-Email-Campaigns-with-Autoresponders. I don't see any huge difference with your request with the current feature.
Perhaps this is what you need http://email.jotform.io/. You can use this app to send emails to the people who submitted your forms.

We want to send them a link to edit their data regularly (and another link
that triggers a deletion, but that is a separate topic), but we don't know
the frequency yet.
The easiest thing would be to add an autoresponder with a predefined date
