I have just filled my form to try it out and I opened it, the items are not specified and just the quantity (please see attached screenshot). I've looked at my email configuration and the settings look fine and I tried to do a test email and it came back with the items so not too sure what's happened.

Upon checking your form, I can see that the items, quantity, and image field are not in the same field. That's the reason why your email notification email content looks like the screenshot you have provided.

You can also customize the email content of the notification email. If you do not want to use Purchase Order integration.

I've just tried to use the Purchase Order Integration on my form but is there any way to seperate products into different categories instead of it just being in one long list?

To organized into grouped categories or have sub-labels for your long list products, please check this guide: https://www.jotform.com/help/178-How-to-Have-Sub-Category-or-Sub-Labels-on-an-Order-Form
