Receiving different replies between registration form and collected data

Hello,

I would like to receive a 'lighter' replies when collecting my data.

Is it possible to have a long options so that the people who fill the form have a lot of information but the data received to be shorter a word in order to facilitate the processing?

For example: Options in the form: options: 1. Rosted beef 2. Saumon in sauce 3. Grilled vegetables  

Collected replies in the data: 1. beef 2. fish 3. vegetables

The value is used for submissions while the label is what you see on the form.
