I have just received an email to say that I have reached my monthly submissions limit and that I need to upgrade to keep my form active beyond Monday.
However, when I looked at the pricing plans, it only allows me to subscribe for a whole year and my scholarship application closes on Thursday, so it seems a bit excessive to pay for a whole year's subscription to just keep the form open for three more days.
Please can you advise me how i can either just pay for one month or whether you would be willing to over ride this for just three days?

You can upgrade your account to a paid plan for one month. You need to choose the monthly payment schedule as displayed in the screenshot below.
Please note that you need to downgrade your account to free plan since JotForm auto-renews at the end of each term.
