I want the form to reject an entry as too large if a user's input number exceeds another field which Jotform calculated using conditional logic. How do I do that?

There is no straight forward approach to do that.

You can disable the submit button in the first place and then in the conditional logic, check the field value if it exceeds another field and based on the comparison, show the submit button.

Otherwise, show the error message(which will be hidden in the first place too).

To know more, you can follow this guide: https://www.jotform.com/help/57-Smart-Forms-Using-Conditional-Logic

You need to work with the "Show/Hide Field" and "Enable/Require Field" to achieve this.
