I am attempting to take the Registration Date and add 60 days to it. Unfortunately, when I do the Date String calculation it comes out with a day of the week listed as well. I have tried to convert it back to standard mm/dd/yyyy format, but as you can see in the screen shot, it translates into a bizarre number.
Ultimately I am attempting to take this date and add it to a link in the users email which will expire on the given day. If there is a better way to to accomplish this, I'm open to other suggestions as well.

If I understand your requirement correctly, you want to add 60 days in the registration date and display in another date field. Is that correct?
You can add condition in your form to achieve your requirement. Please take a look at the following cloned form and see if this works as expected: https://form.jotform.com/80354285065962
I cloned your form and edited the condition you has added. Please check the screenshot below on the condition I edited:
Hope this helps.
