Is there a way to only allow registrations of a certain number per option?
For example if I have several dates to choose from but have a limited number (4) that can be in each slot - how do I create a form that will calculate that once 4 has been reached it not longer becomes an option?

Yes, it's possible to achieve that, the following widget will behave exactly as you want: https://widgets.jotform.com/app/gift_registry
This guide will help you adding the widget to your form: https://www.jotform.com/help/252-How-to-Add-a-Widget-to-Your-Form

There is a max of 4 spots available per time (which is for all registrants as a collective group) - will the gift registry one do that?

The widget will display the option, you may add fixed dates or times, but you cannot add a calendar or time field inside the Gift Registry widget. However, the widget allows you to set up an available number of times that each option can be selected and once it's reached it becomes automatically disabled.
Here's a screenshot about how you add the options to the widget:

I hope this helps.
