Is there a way in which I can have multiple email addresses as an administrator for our forms so that we can both see when forms are submitted?

I believe you want to allow multiple users to check the submissions you have received in form. Is that correct?
Yes it is possible to achieve your requirement by taking advanatge of our "Sub user account" feature. This type of users are to assist you in your work. You can share your form with your sub user account and also restrict the access as well.
