I've often used Jotform's integration with Google Sheets to great effect so that I can see live updates of responses for forms I've created, but our organisation is moving to use Office365 in the future. My question is, is the Office365 version of Excel something that can be integrated with Jotform in the same way as Google Sheets? I couldn't see it on the current list of integrations but as they are similar programmes I wasn't sure if this would be possible or not?

Unfortunately we do not have integration with Office 365. The only option available is to integrate your form with google spreadsheet.
Alternatively you can take advantage of Zapier app which will help you integrate between Jotform & Office 365: https://zapier.com/apps/jotform/integrations/office-365
