I need all fields to be included in the e-mail that is sent to me even if the field is blank. I am copying the data into a spreadsheet that in turn fills other Worksheets automatically.

You can set the option called "Hide Empty Fields" to "No" under your notification email settings so empty fields also become visible to your submission email.
Go to Settings->Emails->Notification->Advanced
