We would like to setup a form that would allow our members to select and register for multiple safety courses at the same time. We allow our members to select "send invoice" or pay online. If they pay online we can easily capture the course they want to register for and the date they want to attend using the sell products setting on our authorize.net integration. The challenge is with the send invoice members. What's the best way to add to this form so that if they don't pay online, I can still have them go through the same process of selcting the courses and dates they want to attend. Then having it total up on the form what all they've selected. I can have them select payment method right int he very beginning so we can set conditions for the form to perform accordingly.

To my understanding, you want a different payment method. One that will collect payment and one that will not collect payment but will still gather information what the user selected or wants to attend.
If yes, you can add multiple payments gateway to your form, please follow this guide: https://www.jotform.com/help/182-How-to-Create-a-Basic-Multiple-Payment-Form
You can also use the Purchase Order for the other payment gateway if you do not want to collect payment. Here's a guide: https://www.jotform.com/help/460-How-to-Create-Payment-Form-with-Purchase-Order
Please give it a try and if you have questions or need assistance, please let us know. We'll be happy to assist you.

Thanks. This is helpful.
On the non-payment gateway version what features inside the form build would be best for me to use to build the form so that it would allow them to view a list of all course names available, have dates each are available underneath each one, let them select the date they want to attend and then have the entire form calculate the total for them (i.e. one course 5/5/18 may be $100, one 6/5/18 it may be $250) and they can pick all the courses and dates they want and have it total for them and then allow them to submit it. Basically, it needs to function exactly like it does with the authorize.net sell product integration but w/o payment.

The Purchase Order payment tool has the same payment options as the Autorize.net payment toll but without payment vendor integration. You can set the products the same way you set them with Autorize.net.
Here is my demo form with the Purchase Order payment tool:
