Does the current Dropbox integration allow me to change the name of the document or only that of the subfolders? We would like to not use subfolders and just change the document name instead. Is there any way to do that?

Unfortunately, the filename of the submissions is not editable.
But, you can still customize or rename the folders in the your Dropbox integration. You can use the Unique ID widget and add a prefix on it. The generated number will follow and it will increment for each submission.

Thanks for getting back to me. That won't work for what we need, we will likely use the Google Drive plugin as it still creates the subfolder but it names the file correctly.

Are you trying to rename the uploaded file or the attached PDF report?
As far as I know, none of the integrations will allow that, we could however open a feature request if you want, although we do not provide an ETA, we would keep you updated via this thread.

I tested the google drive integration today and as you can see in my image. It named the pdf based on my settings however it also created a subfolder with the same name and placed it in there.
So I know it can custom name the PDF, it just wants to add the subfolder as well.

Unfortunately, you can't remove sub-folders in Google Drive.
This is possible with Dropbox but there's no option to set a specific file name on the submissions PDF.
However, submissions PDF are prefixed with their submission ID. Example:
