How can you disable notification emails that you get once someone completes a submission?

There is no option to just disable email notifications set up in your form so you will not receive email alerts when your form gets submitted.
You have to option to delete the email notification so you will not receive any emails when someone submits your form.
If you want to keep the email notification in your form, you can try to do the workaround below.
You can create a condition that states, "If a field that is required is empty, send Notification 1 to my email address".
With that condition added in your form, the notification will never be sent when the form is submitted since there will be no instance that the form can be submitted with a required field left empty.
You can then disable/delete the notification if you want to start receiving email notifications again.
