How to capture submission in form for registration received through check?

I am not sure if I have understood your question correctly. Do you mean to say that you want to manually capture the registration data with payment that you received by check?

Yes it is possible to achieve your requirement but the payment form should be configured to receive online payment along with check payment as well.
