notifications were going to the wrong address so I changed the email address on my account to the one I want notified. I've asked the recipient of that address to whitelist the jotform from address and check junk, but they still aren't coming through. Is there anything else you can check your end?

As far as I understood, email@example.com is the address which is not receiving notification emails, can you kindly confirm?
I have checked the mail log for this email, as my colleague did few days ago, and we see that notifications are sent at our end:
I have also checked the Bounce list and can confirm that this email IS NOT in it.
So, I can suggest whitelisting JotForm IP Addresses and Domains:
