I have setup multiple Notification emails for different email addresses.. However when I do a Test Email it tells me that the email was sent to my Account Email. not the one that was setup for that specific notification.

Test it Live or just when viewing your form notifications settings and by hitting "Test Email" button? Test Emails (button) will only send to the email associated with your account.
Also, I have just check your notifications settings and you have set your Sender E-Mail to email field. I suggest to use email@example.com, this can be found on the dropdown options.
