is there a way for me to sort and download just 'specific fields' of form data?

Example: I'd like a list of just

1) Full Name

2) City State, Country, Province.

Yes. In the View Submission page of the form there is option to select/unselect the data/fields you want included in the viewer or report.

Example:

You can also just create Report using the submission data. In the Report you can select only those data/fields you want to appear in the report.
