Does my data stay in Canada?

I have a client that is bound by very strict Canadian regulations.  If my site is hosted in Canada, and accessed by someone in Canada, when someone completes the form and submits it, will the data stay in Canada?  If my site as a security certificate (SSL), will the data ben encrypted?  Or does JotForm take care of its own encryption?
