I am designing a website for a friend's company and a customer contact form is required. However I get the impression for the form to work properly it would require my friends email address.

So long as your friend doesn't mind you having access to the submission records of the form, it should be no problem. Just set up an email notification and replace your email address with your friend's.
In the form builder, open the form for editing and on the Setup & Share tab, click Email Alerts > Notification > Reply-To and Recipient Settings > change Recipient E-mail from yours to your friend's > click Finish and save your changes.
