You can check out your activity logs from your account settings. You can select the time-frame and action type. Here are further details: How to View Your Account Activity Logs

On the other hand, you are able to view the revision history of a specific form. Please edit one of your form which you have shared with your sub-user and click on the "Revision History" button which is under the form title. You can display the recent changes and the owner of that changes from the right panel.

Here is a user guide that is about the revision history: How to View Form Revision History

It appears that the history only includes changes I have made. How do I
view changes that were made by sub-account users that I have given access?

You can collect the account login information of your sub-users and check their account history form modifications so you can see who modified or made changes to the form.
