Hi there - is there a reason a completed JotForm will not be read as a ticket in ZenDesk, whereas emailing the same email address directly will create a ticket...?

Are you trying to create a ticket that is supposed to be placed by the user (from the user's email address)?
Normally, the email notifications are being sent from the email@example.com email address. The users' email addresses are being added to the Reply-To: header rather than the From: header.
