In my online postbox form I want stripe to use the total due filed (calculated based on the selection in the drop down menu) for the payment. How can I do this?

I have checked the Online Postbox Signup form in your account and I see the drop-down you are referring to. I noticed that you have already enabled and set the Calculation Value for each option in that drop-down (Where do you want your address?). And, I see that the value is being passed to the Form Calculation widget (Total due - €) after it.
I understand that you would like to have the total due passed to the Stripe payment field below your form. And to do that, you just have to change the Payment Type of the Stripe payment field to User Defined Amount and then select the Form Calculation widget (Total due - €) from the Get Price From option
