I have a form with a lot of Grade fields that each have a lot of selections.
As an example, currently, the form returns this...
Blue = 25
Black = 75
Is it possible, instead, to return this?
Blue = 25
Black = 75

No, that's not presently possible in emailed notifications but when the record is viewed, unfilled fields and their labels will be hidden by default. (If you ever want to see the unfilled fields too, click the little gear icon below the "Delete" button) :

Thank you. Yes, I saw that. This works well for items regular text/numeric fields and even radio or checkbox fields, but unfortunately has no effect on Grade fields since the 'empty fields' are stored as a part of the returned value. As a result, even if none of the options of a Grade field are filled, a string is still returned filling the resulting submission with unnecessary cruft. See below for an example.
As an aside, there are some inconsistencies with this behaviour and there appears to be a bug in the display of the Grade field result set as well.
I've set up a test form to illustrate.
Here is an email response with all fields filled and then some fields filled:
Notice how the Radio Buttons and Check Box fields are nowhere to be seen? If this is inadvertent, yet possible, then it could be applied to other fields as well and called a feature.
Then there's the report view from the same submissions:
Notice How the Total shows 100% regardless of what's been filled in?
To be honest, I can live with the display bug showing 100% since that is only useful to me during data entry. It's the filled values I want to find quickly and easily without confusion once it's been submitted. My use case currently has 18 Grade Fields with one having 60 items to choose from. It seems unnecessary to return such a large amount of information, based on it's current behaviour, when as many as 59 of them may be empty upon submission.
What would be great to see is a setting for the Grade Field that allows you to select what gets sent. "Send unfilled items" or something to that effect.

You should probably reset the emails. To do that:
1. Open your form on the Form Builder
2. Click on "Setup and Share" tab,
3. Click on "Email Alerts",
4. Select "Notification",
5. Click on "Delete Email" button,
6. Click on "Email Alerts" again,
7. Click on "Add New Email" and complete the wizard,
8. Save your form.
