How can I make it so the signature portion of my form is editable by my client after they've submitted it, then I've added details?

If I understand you correctly, the process goes like this.

    1. The user fills the form
    2. You edit the form (fill the fields at the bottom and sign the form)
    3. The user signs the form

You can include the EDIT LINK in the Autoresponder email that is sent to the users who fill the form.

You can also create a separate Autoresponder email that is sent when you fill the extra fields. This can be done using conditions. Make sure that the Send on Edit option is set to Yes.
