I have recently received an email to say someone has completed my survey but i cant see the responses the forms just come back blank, and i require the information asap for my dissertation project for university.
Please could somebody contact with me on how i get to view the responses?

I'm sorry, but I cannot find the logs of the submissions that you are referring. The fields are not required, so maybe someone mistakenly submitted the form. You may consider making the fields as required, so they cannot skip it before submitting the form.
The required option is in the field properties. See screenshot:

when people fill in the forms were would the responses be sent?

Yes, submissions are responses that you received through your form, you can view them by following: https://www.jotform.com/help/269-How-to-View-Form-Submissions
In order to receive submissions via email, you have to have Notifier set up, here is how you can do that: https://www.jotform.com/help/25-Setting-up-Email-Notifications

but the forms just come up blank as though nobody has completed them. this
is very worrying as i require this information for my project that is due
in 2 weeks.

I made a test submission using your form https://www.jotformeu.com/form/81007888684368
Can you please check on your form View Submission panel if my test submission shows. Let us know if still not showing.
Please take note that you have set your data to use EU Datacenter
which means that in the View Submissions page, you must be on the EU domain.
