I want to remove the link to my paypal account and switch to my stripe account

You only need to edit your form in the Form Builder and select the payment field, once it has been selected you will get the field options, click on the trash button in order to remove the field from your form: 

And add the Stripe integration.

Here's a screencast guide that you can follow:

1. Open your form in the Form Builder.

2. Select the Payment field and click the Remove button.

3. After that, add the Stripe payment processor to your form.

4. Click the Gear icon to connect it to your Stripe account.
