I created a form for customers with text, signature and date. When I receive the email submission notification, everything is there but the body of the text (basically the whole form). I cant seem to find out how to make the entire form appear when I see the email submission. Why does this have to be so complicated? Thanks Bob

Yes, text is not added to the email body by default to the email body, this happens since basically the purpose of the text element is to be displayed in the form itself and not being included in the email since it does not have any inputs.
You may alternatively use any of the following widgets to display the text on your form and include it in your emails:

Otherwise you will need to manually add the text to the email template, this guide will help you editing it: https://www.jotform.com/help/430-How-to-Edit-the-Email-Template-for-Notifications-and-Autoresponders
Also, you may enable the show headers and texts option in the submissions page and show the static text in the PDF report of the submission, then include the PDF report in the email, you will find the option in the email wizard, under the settings tab of the form builder.
