Is there a way to add a payment option were I can have the person filling it out add a special dollar amount and add it to there total. Example if they wanted to give a special offering instead of a predefined amount

You can add a discount in your PayPal Integration.

However, if you want to add an amount to your total, we need to use user defined amount and manually calculate all items and its price.

What if I want to use both sell products and user defined on the same sheet. Is this possible

No, it's not possible to do that, only one payment integration is allowed and one payment type at the same time is allowed.
Now, if I understood correctly your requirement, you want to allow your users to pay a custom amount besides the fixed ones you have, if I'm correct, then you may simply add a product with a price of $1 and add a quantity text box, they should enter the amount in the quantity field and that would end up as the amount they will pay.

Ok. Yes I creating a form for our church to submit financial report. For what we need it needs to be able to have a set price for items and then be also have a spot for them to add a custom dollar amount then total it all at the end. I want to be able to achieve this with jot form but looks like i will have to find another avenue to achieve what i need to be done.

As my colleague mentioned, you can add a price of $1 and add a quantity text box, so your users can enter a custom amount.

Another way to achieve this is to set your products and custom amount field outside of the payment field using Basic form fields. You can then perform a calculation inside of the form and pass it to the payment field.
