How to I keep track of an inventory of aprox 75 items.

Sales reps will go to a form and specify how many they sold that day.

I then need the form to update my inventory which I will use to reorder.

I can suggest the Quantity Gift Registry widget for the purposes you described. It allows to keep track of several items available and also you can updated the quantity any time.
