when someone is filling out the form I have online, I do not receive an email.
I tried with 2 notifications to two different emailaddresses, but none of them received anything.
It all worked before, but since a week or two it stopped working.

I do receive the Test emails though.

Please try using firstname.lastname@example.org as your form "Sender Email";
After doing this solution, please try doing a live test submision. See if you still can't received your form notifications.

How come it does not work, when I put "E-mail" in there? It used to work.

Hello Brdc. It's possible that your service provider are blocking off emails or sending the emails to your spam folder when notifications are coming from any of these IP addresses:
So if you prefer using the old settings where you have your "E-mail" field as sender, please do contact your email service provider and have the following IP addresses above whitelisted.
