We have used Jotform for a while now but we have found the reporting lacks. Understanding this may be because we lack some knowledge. For instance, we have a membership form but also want to ask for donations. We would like membership amount and donation amount to have its own column in the report plus a total column. Is this possible?

Yes that is possible. The achieve such functionality, please follow these steps.
1. Create a field for your membership amount
2. If you need to use dropdown/multiple choice/single choice fields, simply assign calculation values for each option
3. Create a separate field for your donation amount
4. Add a Form Calculation widget, which will compute the total for both the membership and donation amount
5. Add a payment field then select payment type as User Defined Amount, then set it to get the price from the form calculation widget on step #4
6. Since the total amount will be displayed on your payment field, you can hide the form calculation widget. For test purposes, I have displayed the form calculation field.
