Are you referring to the data submitted by your respondents? Yes, it is possible to send those data over to Dropbox.
Here's a guide that has the instructions on how you can integrate your form with Dropbox.
Upload-to-Dropbox-with-JotForm
Once your form is integrated with your Dropbox account, a PDF copy of the submission will be saved in your Dropbox folder every time the form gets submitted.

Which is what we want to happen so the data on the form is secure. (The encryption will not work for us)
The Applicant 9Respondent) will still get an email as usual?

That is correct. If you add Dropbox to your form, your Dropbox account will receive a copy of PDF submissions.
If you do not want to receive an email alert, you can delete the notification email in the Email Settings page. You can also change the email recipient by following this guide: https://www.jotform.com/help/41-How-to-Change-the-Email-Address-Used-for-Notification-Email

awsaljcReplied on August 17, 2018 at 1:43 PMI’m able to login directly to our Dropbox with no problems, however, the Dropbox integration tool is not authenticating the account. Have tried several times in 2 different browsers.

I cloned it to test the integration on my end and I was not able to replicate your issue. The authentication was successful and I was able to integrate the cloned form to Dropbox. Here's the screenshot:
I cleared your form cache on our server. Could you please try it again?

You need to delete the emails alert in the Email section. Here's a screencast guide:

Yes, this is correct. If you want to send emails on form submissions to your respondents, you should leave the Autoresponder email set up: Setting-up-an-Autoresponder-Email

Yes, you can add a notification email to your form and remove all the default content then edit the email content to your own preferences.

I want to be sure there is no correlation there.
This is what I want to happen.
Upon Submission:
1. The completed form goes to our Dropbox (I’ve already set that up)
2. The email Recipient is notified via email that a form was submitted. (I don’t want any fields of the form to appear in that email)
3. The applicant (Responder) receives a copy of their completed form in their email

Email Notification and Dropbox Integration are two separate things.
Editing the content of the email notification will not affect any of the data sent out to the Dropbox account integrated with your form.
