I am using PayPal (not pro) and have three payment options-1 for new membership-one time pay, 1 for membership renewal -one time pay, and one for auto annual. My question is do have to make the one time pays- subscriptions? If so do I have an option to make them one time payments? Or, can you set up each payment selection separately- i.e.: the two one time payments as "products" and the one auto renew as "subscription"?

Yes, you can add all these payments as subscriptions. Here is a sample form I created: https://form.jotform.com/82116112872955
You can do this by selecting the subscription period and Number of Payments. Setting the number of payments to 1 means a product will be billed for once.

Thanks. I set it up as products- so I need to redo it. Is there anyway to move the people that signed up for auto renew (now I know it really wasn't- it was just the one time thing) -move them over to the auto renew? That was a followup question...sorry!

It is not possible to subscribe the users if they have submitted the form by selecting a product.
You can ask the users to sign up again next year or maybe you can refund the users that have purchased a product now and ask them to sign up again (now that you have subscriptions set up).
