they have asked me the following:
"Do you have access to edit jotform? Do they use PayPal pro? Or just regular simple forms?
If simple forms it will be much easier for now to add
notificationUrl to jotform = IPN setting in PayPal
and set our url as IPN in PayPal. In this case it will work for both cases"
Can we do this? So we have notification IRL to jotfrom, and then change IPN URL from jotform to our program...will jotform still work under these cirumstances?

You can use either a Paypal Payments Pro or a regular Paypal merchant account on your JotForm-created forms. It is as easy as replacing the current payment module with the other one.
As for editing the Paypal variables, I am sorry to say but it is not possible. A better workaround would be to use your program's URL as your Paypal account's IPN, and to add a provision in the script to send Paypal details to JotForm's IPN URL as well.
This way, you can have access to the payment details and use it on your own program, and still be able to trigger all post-payment functions on JotForm's side (such as notification emails).

I apologize for not mentioning that this mere suggestion will require custom development work.
The way it will work is this:
On your Paypal account, the IPN URL that will be used is your own script (or program). This program, after receiving the details, will then pass them to JotForm's IPN URL via PHP cURL.
Again, I am sorry to say that this will be for your developers to work on. We don't have a ready-made template or script for this.
