Is there anyway I can set it up so that when I get a message throught a contact form to my email that it does not save a copy of this message in jotform....?

This is not possible, since we have to protect our service from phishing attempts, and it will be hard to track such actions without saved form data.
However, we do not claim any ownership of your data. You can still delete any/all Submissions manually anytime you want to.
