How to remove paypal and change it to purchase order?

how can i remove paypal as a payment option and replace it with a purchase order without having to rebuild my products?

To change the payment processor on the form, you need to delete payment field and to add new payment integration. Products will be re-created automatically on new processor, so you will not have to rebuild them:
