Application form that requires sensitive data

We are developing an in-depth form that is going to be the focal point of our operations. It will require sensitive data be entered that we don't want to be sent in plain text to anyone's email. 

Is there a way for jotform to not allow for the form data to be sent to the submitters email once complete?
