When I setup a payment form with Stripe and then set it up to post the form data to my custom thank you page, does Jotform post any payment info, I know I won't get the credit card info, but what about the actual payment details like the amount charged?

When you add a Stripe Payment Field to your form you can set it up to have the payment details collected and sent to your Stripe Account as the Payment Gateway to accept the payment but inside of Stripe itself you must also have some sort of payment form and script created to collect these details to your liking. The scripting for this is purely customizable within Stripe and this is why we integrated with it to allow for more options within the payment form. You can also easily test this payment option for free as well in a test mode that is offered but it is not the final payment form. Thanks for the reply, but I have a question abour this statement:

Where does one configure this in Stripe? I haven't ever seen anything in Stripe that allows any configuration of a payment form...

I apologize perhaps I misunderstood you then. The template of the payment script that is built is what's customizable or it can be left as is but you would need to copy and paste it to edit it in notepad or elsewhere.
Now when you say post payment data to php script, did you mean on our side or theirs? I think this is where I am slightly confused.
When your form is integrated with the stripe setup it should still carry over the sent data that was posted to stripe's payment gateway.
