Hi. I am creating a new form for a potluck event where I need people to select what food items they are going to bring.
I want to create the selections (ie. coffee, fruit, sandwiches) and I want to be able to make options unavailable after someone chooses it. Is this possible?
Thanks!

Try our Gift Registry widget, it has an option to limit the user to select only one item in selections.
To do that ,set the max selection into "1" and limit the quantity into "1". When the submitter1 select an item and submits the form, it will be unavailable to submitter2 or other submitters. Also, if you want to hide the counter of the widget you can inject this custom CSS code to Gift Registry widget
.items-left { display: none; }
Here's a guide How to Inject Custom CSS Codes
Please see the demo form I made for you, if it meets your needs.

Thank you. This is excellent!
New question: I am creating a survey and I want people to be able to come back to it if they can't finish it in one sitting. How do I do that?

Jotform two layouts and depending on the layout used on your form, you can follow one of the guides below to save forms and continue later.
For the Page Layout: How to Save Forms and Continue Later
For the Card Form Layout: Setting up the Continue Later Feature in Card Forms
