One of my clients has requested that the person's email filling out the form be captured in the "from" portion of the email instead of the noreply@jotform address. The form is already capturing the sender's email, but he wants it in the "from" section as well.
Is this a possibility and how can I enable this in the form builder?

It isn't possible to have the sender email be the user filling out the form. If would be a huge security risk if it was possible to show a different sender email than the one that actually sent the email.
You could set the email to send from a specific address:

The sender name and reply-to email can also be changed:
https://www.jotform.com/help/30-Explanation-of-Email-Notification-and-Autoresponder-Settings
But it wouldn't be possible to have it show the sender email as anything other than the actual sender email.
