Hello,
Is there a way to halt the automatic updating in order to make changes to a live form?
I need to change a fair amount and it will take 30+ minutes. I do not want people to see the jumble that will ensue.
I've already done testing on a clone. Can you take a section from one form and drop it in another? I do not want to change the form's URL.

Please note that the form builder is enabled with auto-save feature. Unfortunately, it is not possible to pause the updates while letting the form displayed online. You may consider disabling the for time-being and make the changes. Once the changes are done, you may enable the form again.
Hope this information helps!

Thought so. Is there the ability yet to put a custom message up when the form is disabled?

It would be possible to display a custom message on disabled forms:
