Date Picker's Date Format

Why will date picker only allow input using US format instead of uk with new JotForm cards?

Since you were dealing with Card Form Layout, regular date picker field's ability to change its date format is not yet supported in this form layout. I may suggest you to use Date Picker Widget. This widget will allow you to display UK formatted date unlike the regular date picker you can find in the basic form elements.
