Does this provide the ability to use fields from their previous form, or information from say a .CSV? That would allow us to customise the emails with an amount outstanding and/or confirmation of their booking details.

You can customize the email by adding an image or changing font styles. Here's a screenshot:

The sort of email we'd like to send is this, where the fields in «field» need to be populated from a CSV file:
Hi «Firstname»,
You will be staying in «Accom».
We believe you have already paid $«Deposit» of your total cost of $«Total», leaving a balance of $«Balance». If that’s incorrect, please let us know.
Full payment is requested by this Friday 23rd
Pay by credit or debit card using this link https://form.jotform.co/80772932829872?groupName=«Group_name»&Email=«Email»&totalCost=«Total»&Paid=«Deposit»&Balance=«Balance»

Unfortunately no it is not possible to populate data in email alert from any external source.
If you want you can take advantage of our "Spreadsheet to form" widget and see if it fits into your requirement. This will allow you to populate data in your form field from excel spreadsheet file.
