Say I have a dropdown menu listing all our sales reps, and the client is to select the rep they are dealing with, then when they hit submit the form is emailed to that specific sales rep?
Is this possible in any way? :)

Yes, that is possible
First of all, you need to create one or more email notification alerts (you can use different templates, though it is not necesary)
Then launch the Conditions Wizard,
1.click on “Setup & Embed” tab
2. Then click on Conditions
2. Choose Send an email after submission, in order to stablish conditional :
4. Choose the fields you wish to match the condition
Then the email address you wish to be sent to
For this example I have set up up to 3 conditional logics, based on 3 different email alerts-
==>However, you can choose the same email alert if you choose to just create one, and then set a particular email address if a condition is matched.
Also, each notification alert can have one or more conditions to be matched .
